Hand-picked on 08/26/24, hand-sorted in the vineyard. Direct pressing of whole bunches up to 1.2 bar.

Pied de cuve with indigenous yeasts. Fermentation at 20°C for 30 days. Malolactic fermentation.

Aged on lees for 6 months with stirring. Not fined. Bottled on 9th April 2025 (Fruit day).
