Citius - Biodynamic white wine - 2023 - Côtes de Provence AOP

Château Gasqui presents the Citius Citius in white wine with biodynamics, 2023. Our wines are produced in organic farming, more specifically in biodynamics, in the French department of Var, in the heart of the region of Provence and the community of Provence Verte.

50% Rolle, 30% Sémillon, 20% Clairette

Manual harvest of 23 and 24/08, manual sorting at the vineyard and on the sorting table at the cellar. Direct pressing in whole bunches up to 1.2 bar. Tank foot with native yeasts. Stirring lees before racking and at the end of fermentation. No malolactic fermentation.

Fermentation at 18 ° C of 7 days, maturing on lees of 3 months. Not fined. Bottled on February 15, 2024 (fruit day).
