Hand-picked on 09/18/24, sorted in the vineyard. Destemming and crushing. Cold maceration for 48 hours. Native yeasts, light pumping over during maceration.

Fermentation in stainless steel vats for 15 days, malolactic fermentation, aging on lees in stainless steel vats for 6 months.

Bottled on 9th April 2025 (Fruit day).
